Simple ayam betutu recipe ( simple balinese roasted chicken)

how to make delicious ayam betutu in simple way

Bali baked spices chicken in banana leaves wraps.
Ayam Betutu is usualy served in Balinese traditional ceremonies. Here I write the very simple way how to make Ayam betutu.


Ingredients: 1100 gram chicken, 5 cm ginger, 2 small slices galangal, 2 tablespoon sliced lemongrass, kaffir lime leaves, bay leaves, 100 ml coconut milk, sugar & salt, banana leaves for wrapping spices / aluminium foil, 1 teaspoon dried shrimp paste

Spice for paste : 6  cloves garlic, 3 small onion, 3 red cillis, 4 cm lesser galangal (kencur)

Rub paste : 1/2 teaspoon candlenuts paste, 1 teaspoon coriander seed powder, 1 teaspoon white pepper powder, 1 teaspoon tumeric powder, little bit salt, little bit water

Directions :
  1. Rub the chicken with rub paste
  2. Heat the oil and saute the ground spices until fragrant.
  3. Add bay leaves, galangal, kaffir lime leaves, and dried shrimp paste, cook until fragrant arround 2 minutes.
  4. Add the chicken, mix well.
  5. Add water and little bit coconut milk, cook until chicken is tender.
  6. Add sugar and salt and add the rest from coconut milk.
  7. Wrap the chicken with banana leaves.
  8. Preheat the oven to medium-high and bake the chicken in 190 degress for 45 minutes
  9. Ayam betutu ready to served with warm rice and sambal matah
